Liberté For Georgetown

“We love the location. Prospect Street is the gateway to Georgetown University,” explained restaurateur extraordinaire, Hakan Ilhan as he gave The Georgetown Dish a hard hat tour of Liberté, his new French brasserie (formerly Morton’s Steakhouse).

Understanding the changing restaurant market, Ilhan, who also owns Mirabelle, Al Dente and other DC restaurants, chose Swatchroom to design this millenial-minded space.

With seating for 250, including al fresco patio seating for 70 at the lowered front deck and on the expanded new solarium side of the restaurant, the 6,000 square-foot space will be the "every day choice” for neighbors, students, their parents and tourists.

Slated to open in October, Liberté features a private dining room with a chandeliered eggshell-shaped booth inspired by an Alain Ducasse restaurant in Paris with its own entrance. A glass-walled wine deck with over a thousand bottles is situated in front of the 1,800 square-foot kitchen.

In addition to French staples of steak frites, escargot, and onion soup, the classic menu will include cassoulet, pastas, seafood and lots of salads. Look for nostalgic American favorites too, including ice cream sundaes (with homemade ice cream, bien sûr ) sharing the dessert stage with creme brûlée and profiteroles.

Open seven days a week, Liberté will serve late night diners until 2:00 am Friday and Saturday, and until 1:00 am Sunday throughThursday. Brunch on weekends starts at 8:00 am.
